Brownie Pecan Pie

With Thanksgiving just a week and a half a way I thought I would introduce you to my Brownie Pecan Pie Recipe. Pecan Pie; buttery, sweet and crunchy, combine the love of brownies and  you pretty much have heaven.

 9"-9 1/2" deep dish pie shell. (this can be premade and frozen or you can make your own. 

1. Freeze pie shell for 15 minutes if it is not already frozen. Preheat your oven to 400 degrees. Line your pie shell with foil or parchment paper, fill with pie weights, dried beans, or rice. 
2. Prebake pie shell 15 minutes. Take the foil or parchment paper out with what ever you are weighing it down with.
3. Lower the temperature of the oven to 375 degrees. Place back in the oven (you don't have to wait for it to come to temperature) bake 10 more minutes. Let cool. 

Filling: while pie shell is cooling

2/3 cup light corn syrup
2/3 cup firmly packed brown sugar
1/4 cup butter melted (1/2 stick)
4 ounces chocolate (semi-sweet) chopped
pinch of salt
3 eggs & 1 egg yolk
1 1/2 tsp of vanilla
1 1/2 cups of coarsely chopped pecans 

1. Place the syrup, sugar and butter in a medium size sauce pan. Cook until butter is melted. Turn off the heat and add the chocolate and salt. Let it sit for 7 min. Stir until smooth. 
2. Add eggs and egg yolk and vanilla. Add the pecans. Pour into prebaked pie shell. Use a fork to make sure the nuts are evenly distributed. 
3. Bake 40 minutes rotating half way through. When it is done the center may be slightly wobbly, but that's ok. As it sits it will finish cooking. 

Let is cool to room temperature. This pie can be served at room temperature or cold. When cold it will be more firm. This is great with whipped cream or vanilla ice cream. 

Hints: 
1. Please don't be tempted not to prebake the pie shell. It really makes a difference and you do not want  a raw bottom. 
2. Don't be afraid that you underbaked the pie. That is the lovely thing about chocolate. It will firm the pie right up. 
3. If you notice your pie is browning to fast, cover with foil. 
4. If you are filling like you want something different, try using mixed nuts, or macadamia nuts instead of pecans. 
5. If you want clean cut pieces partially freeze the pie and then cut and plate. 
6. The picture below is what your pie will look like when refrigerated.

Ok, I think I can attempt this one. I can substitute the butter and then find a good shell recipe. Thanks Jyl.

I will amaze them all at Thanksgiving with my awesome gluten and dairy free pie! How long can you keep it frozen or in the fridge?

A regular pie you can freeze up to a month.
