Wonderful Pasta

This has to be one of my very favorite pasta dishes ever. If you love roasted red peppers you will love this. This is a quick easy recipe (only 20 minutes from start to finish) with things you probably already have in your pantry. 


Roasted Red Pepper Sauce with Pasta
1/2 pound pasta 
1 tsp olive oil
1/2 cup chopped onion
1 tsp of minced garlic
1 (12oz) jar roasted red peppers, drained and chopped
1 cup coarsely chopped fresh basil or 2 tablespoon dried basil
1/2 teaspoon oregano, thyme, garlic salt
1/4 tsp crushed red pepper (option if you like heat)
Salt and pepper to taste
3/4 cup chicken broth 
1/4 cup fat free half-and-half or a combination of 1/4 cup of skim milk and 1 tablespoon reduced fat cream cheese

Cook pasta. While pasta cooks heat oil in a pan. Cook onions and garlic for five minutes or until they are soft. Stir in roasted red peppers, basil, oregano, thyme, garlic salt, salt and pepper. Cook one minute then add chicken stock. Bring to a boil then simmer for 10 minutes. Turn the heat off and add half and half or my favorite milk and cream cheese. Place in blender. Blend till smooth. Pour over pasta. 

Four servings
1 cups sauce
This is great with shrimp, chicken, pork, anything or just plain.
